At Lilia, Scandinavian simplicity, Japanese traditional technique, and the nuanced flavors of Asian heritage exist in thoughtful conversation.
Founded in 2026, our work is defined by patience and restraint. We rely primarily on beautiful domestic ingredients and make all of our fillings from scratch to capture the honest character of our raw materials. This process cannot be rushed. Lilia's sourdough undergoes a slow, three-day natural fermentation to develop its deep flavor profile, while all of our bread, viennoiserie, classic Swedish cardamom buns, pastries, desserts, and rotating sandwiches are shaped entirely by hand.
Our small team works without shortcuts, preservatives, or dough conditioners. We simply trust the pacing of traditional long fermentation and allow the daily bake to steadily evolve.
